Description:
A member of the viola family, with its name derived from the French pensee, meaning thoughtful, the pansy is often referred to as a cultivated violet. Though botanically a short-lived perennial, it is treated as an annual in most areas. Typically planted in the spring, the pansy prefers cool air and soil temperatures, but with shade and abundant water may bloom throughout summer. Transplants or seeds can be planted in late summer, and, if mulched in colder climates, will bloom in early spring. The edible flowers are often used as a garnish, in salads and to decorate cakes.
